Waistline be damned, I am all about comfort food these days. I’ve largely been trying to not dip into my freezer supply of food and have instead been finding comfort at the end of each day in cooking recipes that warm the soul and fill the belly. Bonus points if they make for good leftovers as I am trying to be extra conscience about avoiding food waste. Today I am rounding up some of my favorite comforting recipes that I’ve relied on for years or recently discovered and really enjoyed.
One of the silver linings of quarantining has been the extra time at the end of the day to make dinner without feeling rushed. My girlfriends and I have taken to sharing favorite recipes we discover on our group text thread and I’ve loved bookmarking them for the week ahead. But I’ve also been yearning for old favorites on the below list, too. And if you don’t yet have a meal planning pad to arm your grocery runs, I can’t recommend this one enough. It’s helped me make less impulse purchases, plan my meals according to leftovers and cut down on food waste.
