Bubbles are coming to the surface everywhere it seems these days! This NYT article takes a look at how more and more cocktails are becoming infused with the effervescence that makes social sipping feel light, airy and celebratory- whether or not you’ve got a special occasion on your hands!
So for your next cocktail hour, scan the drink menu and order up a delicious concoction that incorporates some sort of carbonation. How about a champagne cocktail? A wine spritzer infused with fruit? Sparkling white sangria? Choose your cocktail of choice and prepare to feel a bit lighter!
Raspberry Fizz
3 tablespoons lime juice
2 cups cranberry juice
3 cups seltzer
1 cup ginger ale (or champagne- let’s be honest, that’d be better!)
1 pint raspberry sorbet
In a small saucepan over high heat, combine the sugar and 1/2 cup of water. Bring to a boil and cook until slightly thickened, about 2 minutes. Remove from heat and add the lime juice. Let the lime syrup cool to room temperature.
In a large pitcher, combine 1/2 cup of lime syrup with the cranberry juice, seltzer, and ginger ale. To serve, pour into glasses and top with scoops of raspberry sorbet.
Yield: Makes 6 servings
